Colozza's Bakery expects to be sold out by 2pm.

(Parma)- Colozza's Bakery is one of the many Polish bakeries with long lines at the door selling paczkis for Fat Tuesday. Angelo Colozza says the bakery opened at 5:00am and he expects to run out by 2:00. So it's good to get there early.

Colozza says paczkis have really become popular over the years, now Fat Tuesday is a holiday for bakeries like Sweetest Day. He says he's prepared to be busy. Nine girls in the front to take orders and a crew of nine or ten guys making paczkis in the back.

Colozza's Bakery is featuring a new paczki flavor this year, maple bacon. Angelo says he likes to add a new flavor every year.

Some places expects to sell between 20,000 to 25,000 paczkis today and have lines formed outside their door well before they open.

The making of paczkis is such a time consuming process, some places begin making raw dough balls and freezing them at the beginning of January.
